Ingredients
  

  • 4 pieces chicken breasts preferably plump and even in thickness
  • 4 oz goat cheese soft and creamy
  • 1/4 cup sun-dried tomatoes chopped
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons olive oil for searing and roasting
  • to taste salt and pepper for seasoning
  • 4 toothpicks toothpicks to secure the stuffed chicken

Method
 

  1. Preheat your oven to 200°C (392°F) and line a baking dish with parchment or lightly grease it.
  2. Place each chicken breast on a cutting board and carefully slice a horizontal pocket into the side of each, being mindful not to cut all the way through.
  3. In a mixing bowl, combine soft goat cheese, chopped sun-dried tomatoes, and fresh basil until well mixed and fragrant.
  4. Use a spoon to gently stuff each chicken breast with the cheese mixture, filling the pocket generously.
  5. Secure each stuffed chicken breast with toothpicks to keep the filling inside during cooking.
  6. Heat olive oil in a skillet over medium-high heat until shimmering and fragrant, then sear the chicken breasts for about 3-4 minutes per side until golden brown.
  7. Transfer the seared chicken to the prepared baking dish and place in the oven, baking for about 20-25 minutes until cooked through and bubbling at the edges.
  8. Remove from oven once the internal temperature reaches 75°C (165°F), and let rest for a few minutes before removing toothpicks.
  9. Carefully remove toothpicks, slice the chicken if desired, and serve hot, enjoying the juicy filling and golden exterior.
